Peanut Butter Cups, mmmm

We decided to try our hand at making homemade peanut butter cups. I mean why not. It is just another kind of DIY really. I’ll post the recipe we used at the bottom, but first I’ll show you how we made them.

We started off with smooth peanut butter, softened butter or margarine, and icing sugar in the mixer. Once it came together, we rolled it out and placed it in the fridge for 30 or so minutes.

Meanwhile… we took chocolate chips and shortening and melted them together while stirring.

While that was melting, the peanut butter rolls needed to be divided into about 36 pieces.

The peanut butter pieces got rolled into a ball and flattened slightly. We used a fork and spatula to coat the pieces in chocolate. Each piece was put into the chocolate, turned over with the spatula, and picked up with the fork.

They turned out really good.

We will be making these again for sure.

Here is the recipe we used.

Filling:

1 cup smooth peanut butter

1/4 cup butter or margarine

2 cups icing sugar

Chocolate coating:

12 oz chocolate chips

2 Tbsp shortening

You need to make these. Just saying.

EDIT: We have made these several times now and there is no need to roll in a ball and flatten. We actually prefer to cut the “logs” into pieces and drop into the chocolate just like that. Makes the pieces thicker.
