Chocolate and cinnamon?? Yes, I questioned it too. On top of that, there’s also raisins and walnuts. Ok, I’m game to try anything. I mean, if the recipe author took the time to put it in their book, they must think a lot of it.

Well, truth be told, I don’t think much of these. For starters, leave out the cinnamon and probably it would pass as a pretty good cookie. For me, cinnamon and chocolate just don’t go together. I must make a mental note of that… because I’ve done this before and said the same thing.

I’d probably leave out the raisins too. Its a pretty good base for a cookie, so whatever you like to go with chocolate could probably turn into a tasty treat.

A trick I do for melting chocolate squares is to put the pot on the stove, put in the squares and cover it. I do this before starting anything else for the recipe. Turn on the stove top for about 15 seconds, then shut it off and leave the pot on the burner.  While in the picture the squares still hold their shape, they are in fact completely soft and ready to add to the mix by the time I’m ready for them. The great thing about this technique is the chocolate is not hot, just warm to the touch. There’s no risk of burning chocolate.
