Topsy Turvy Blueberry Groovy Upside Down Cake
🙂 No pineapple? No problem! Use whatever fruit you have. I actually started to make this recipe with some apples but lost my train of thought and went to the freezer and pulled out the frozen blueberries instead.
I followed the recipe just like for a pineapple upside down cake. I still melted 2 T of margarine in the cake pan and added 4 cups of blueberries and a 1/2 cup sugar. The berries where frozen so I kept the pan on the stove top to let the residual heat from melting the butter to carry up into the berries. Â Other than that, I followed the recipe exactly to make the cake.
Once out of the oven, I let it cool on a rack for 10 minutes, then it was time to turn it out. I used a spatula to release the side of the cake first.

Recipe:
- Â Set oven to 350F, shelf in the middle.
- Prepare the pan:
- Spread 2 Tablespoons of melted margarine in a 9 x 9 pan (TIP: What I do is put a metal pan on the stove top and turn the element on medium while adding the margarine.  Then turn off the stove. I then add the blueberries (next step) which  are usually frozen so the heat helps warm them up. If you are using one of those rubber pans, just melt the margarine and spread over the bottom of the pan and halfway up the sides.)
- Add 4 cups of blueberries and spread out.
- Add 1/2 cup white sugar over the blueberries.
- Now set the pan and its contents aside for now.
- Prepare the wet ingredients:
- 1/2 cup of margarine and 3/4 cup of white sugar – mix until blended.
- 2 eggs – add one at a time. Stop and scrape down between eggs.
- 1 teaspoon of vanilla – add to mixer, blend and scrape down.
- Now set aside the mixing bowl for now.
- 2/3 cup of milk – set aside to use later.
- Prepare the dry ingredients by sifting together:
- 1-1/2 cups flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- Make the batter by
- Add 1/3 dry ingredients to the mixing  bowl and stir with a spatula a few times.
- Add half of the milk ands stir a bit more.
- Add 1/3 dry ingredients to the mixing  bowl and stir with a spatula a few times.
- Add other half of the milk ands stir a bit more.
- Add remaining 1/3 dry ingredients to the mixing  bowl and stir with a spatula a few times.
- Pour the entire batter onto the berries in the pan. Then spread the batter out.
- Place it in the oven and bake for 40 minutes (varies with oven). Enjoy!
